This is a hunting knife. There are many variations on this theme. Hunting knives are used for a variety of tasks. The most prevalent is probably that of organ removal on the bodies of large animals. This particular knife was used in such a manner on whitetail deer.
The handle of this knife is meant to resemble the antler of a deer. Even though hunters today use highly developed and tested tools in killing and butchering animals they often feel as though they are upholding a more traditional way of life. This mock handle represents this life by harkening back to a time when tools were hand made, often from natural materials.
